A fierce campaigner for traditional and classic French cuisine, Chef Daniel Vasse believes in adding a touch of “controlled creativity” – or, as he likes to put it, “fusion that does not lead to confusion”. A Maître Rôtisseur in the distinguished Chaîne des Rôtisseurs society, Vasse was born in Normandy and studied culinary arts in his native France before arriving in Puerto Rico in 1982. In 1985, he opened his eponymous Chez Daniel in Palmas del Mar, regarded as one of Puerto Rico’s best French restaurants and a recipient of several Silver Fork recognitions.
Vasse, who in 2009 received Tables’ Hallf of Fame award, is also a member of the l’Ordre Mondial du Vin and the president of Friends of the Comunity of Humacao, a not-for-profit association that created and organizes the Festival de la Buena Vida in Palmas del Mar. Vasse participated in the creation of the book La Buena Vida, with proceeds going toward the construction of Palmas Academy, and in the book La Gran Cocina del Caribe.
Vasse’s culinary excellence and commitment to community events, such as the Festival de la Buena Vida and more, mirrors the diverse culinary creations and collaborations undertaken by Vasse.
